Prep Up for the Winter Months with Pickled Squash
Squash is said to be rich in Vitamin A that if you want to improve your eyesight, you need to eat a lot of it. This sweet, yellow vegetable tastes good. You can easily put this down your throat. It is soft and easy to swallow, which is why babies are made to eat this.
There are different things you can do with squash. One of my favorite recipes for squash is cooking it with coconut milk. You let the squash simmer in coconut milk for a few minutes. You can also add some herbs and spices to make the dish more delicious. The sweet taste of the squash will blend well with the coconut milk. This recipe is great for dinner.
But there is one other thing that I like: pickled squash.
Pickled squash is great for the winter months. And since we are nearing the cold months, it is just about time that you start to learn how to make pickled squash. Here is one easy recipe for you:
Peel and slice 2 pounds of squash into cubes. Do the same with 1 ¼ cup of onions. Combine them and then set aside while you prepare the pickling solution.
Combine the following ingredients in a saucepan: 1 ¼ cups of sugar, 1 cup white vinegar, ½ teaspoon turmeric, 2 cups water, 1 teaspoon salt, ½ teaspoon ginger, 1 teaspoon dry mustard, and 1 tablespoon cinnamon. Bring to a boil.
After that, add the squash and onions then boil again for 10 minutes. Once cooking is done, pack the vegetables into sterilized jars. Remove the air bubbles and then seal the jars.
That’s it. Your pickled squash is ready for consumption.
